Berries galore!

Raspberries, blueberries, blackberries and tayberries in the rain... I will freeze these to puree for my kefir during the winter. I already have about 5 kg of strawberries in the freezer from late June/early July. Berries are so easy and slugs and snails won't wipe out the crop, just a nibble here and there on the strawberries...
Unfortunately, I can't access the pic i just took with the ipad... This pic is from a few weeks back with fresh mint from the garden.

Nom Nom Paleo Banana & Strawberry Ice Cream

This is the simplest, quickest best tasting ice cream ever! I have been preparing food all my life and remember as a child that hand crank ice cream maker and later it went electric and I have tried handmade in the freezer and so on and so forth. I am enchanted with Michelle Tam's Nom Nom Paleo Cookbook and happened to have some strawberries from the garden and figured i had nothing to lose, well within 2 minutes I had the most incredible ice cream!!! It is as easy as it looks...

Banana & Strawberry Ice Cream
Ingredients
  • 3 frozen bananas
  • 1 cup frozen strawberries
  • 1 teaspoon vanilla extract
  • 1/2 cup coconut cream (fat from top of refrigerated can)
Instructions
  1. Combine all of your ingredients in a food processor
  2. Blitz for 2 minutes
  3. Serve immediately and enjoy

Making Sauerkraut with Green Cabbage

It took about 45 mins to make 3 kg of sauerkraut which will be ready in a few months time... normally I use white cabbage, but they only had green, so green it was, not organic and with cabbage, it is ok not to go organic as they rarely use pesticides and unfortunately, just cause it is organic, doesn't mean it is more nutritious that non organic, I do have a story about that which someday I will dig out and post... some foods I will not compromise on and they have to be organic, but not cabbage...
